As part of GOS2 (Grand Strategic Objective 2 of the INRAE AlimH Department), its coordinators Vincent Paillé, researcher at the PhAN joint research unit, Stéphanie Chambaron-Ginhac, and David Val-Laillet, are pleased to invite you to their Cross-Perspective Webinar entitled: “Plant-Forward Diets: Between Social Acceptability and Real-World Practices”. This webinar, featuring sociologist Clémentine Hugol-Gential and chef Gregoire Maille, will be held on Tuesday, March 17, 2026, at 2:00 pm. Two perspectives—social sciences and hands-on culinary practice—to successfully transition toward more plant-based menus.

Social acceptability of plant-based foods: representations, resistance, and discourse

Clémentine will analyze the social and cultural challenges of plant-forward diets, including representations of plant-based foods, resistance to dietary change, and the role of media, institutional, and digital discourse in shaping food practices.

Plant-forward cooking in collective catering: technical and creative levers

Drawing on real-world examples, Grégoire will show how menus and recipes can be rethought—despite production constraints—to increase the share of plant-based foods without compromising pleasure or nutritional balance.
